Winter’s Chicken Chili
I make this a lot of different ways but basically the same. Ingredients can be exchanged or use more or less to adjust for your family. This is also a great recipe to use up left overs.
1 24 oz Jar of Randall Great Northern Beans
1 24 oz Jar of Randall Pinto Beans
1 12 oz Can of Chili Beans
1 small can of mild chopped chilis
1 64 oz Can of Chopped Tomatoes
1 Cooked Chicken Picked From The Bone (I also use 4 cups of left over picked chicken or turkey)
1 Chopped Onion Med.
8 Carrots Chunked (I also throw in all left over veggies)
1 TB Ground Ginger
1 TB Ground Garlic
6 Cubes of Chicken Boullion
6 Cups Water
I do not drain the beans. I add all of this and stir well in a Dutch Oven and cook on 350 F for 2 hours. This makes a lot, but makes good leftovers too.
