Recently I was treated to Kodiak Cakes FlapJack & Waffle Mixes for review. Our family is big into pancakes and maple syrup. I have to say I LOVED the Kodiak Cakes Whole Wheat Honey Oat Flapjack – Waffle Mix. These babies fill you up and covered with my husband’s homemade maple syrup, they were unforgettable.
Of course I needed to try the Frontier Flapjacks too. These too are delicious and filling. I made these a little bit thinner and we wrapped strawberries and blueberries in them for a healthy and filling brunch.
Baker Mills (Kodiak Cakes) was started in 1994, but its origins go back long before. When the founders mother grew up in Northern Utah, her father Wallace Christofferson, would cook up a batch of hearty whole-wheat “hot cakes” for breakfasts. Grandpa’s “hot cakes” were thick and fluffy, made by whipping up some egg whites, and folding them into a bubbly batter. The bubbles were a result of adding baking soda and vinegar to the batter-an old-fashioned way of making the recipe fluffier.
Today, Kodiak Cakes has been made into a “add water only” mix. Making it easy for us moms to make for our families. This was no easy task though, they had to study all about food ingredients, and test batch after batch to bring us the Kodiak Cake Mixes, from Baker Mills we can now enjoy daily.
