Recipe of the Day~ Vegetarian Dirty Rice


1 tablespoon olive oil
1 small onion, chopped
1 medium green pepper, chopped small
2 ribs celery, diced
1 clove garlic, minced
2 teaspoons Cajun seasoning
1 teaspoon thyme
1 (16 ounce) can red kidney beans
1/2 cup vegetable broth
2 cups cooked brown rice or leftover rice
salt and pepper, to taste
4 green onions, sliced thin

Preparation :

In a large skillet over medium heat, heat the olive oil then add the onion, green bell pepper, celery, garlic, Cajun seasoning and thyme.
Allow to heat, stirring, for about four to five minutes.

Next, stir in the red kidney beans and the vegetable broth, combining well, then stir in the cooked or leftover brown rice.

Cover the pan and reduce the heat to low.
Allow everything to cook for at least ten minutes.

Remove from heat and add sliced green onions and season with salt and pepper, to taste.
Serve immediately.

Makes 8 servings as a side dish or 6 as an entree.

    Yum, I love anything with some cajun spices in it, so I imagine this would be good!

    PS. Love your new site update. It’s all spring-like, makes me want to scratch and sniff the screen. 😉

    Yummy!! I am always looking for new veggie recipes to try for my family. I am trying to work 2 vegetarian meals into our weekly menu- it’s a slow, painful process- but they seem to be coming around. 😉

    I have a nephew that loves anything with rice and he buys the boxes of dirty rice. I need to make this just for him one day soon. He would enjoy this one and most likely not buy boxed again
