For the above breakfast for dinner I wrapped my favorite pumpkin pancakes around al fresco Maple Chicken Sausages. Then I scrambled some eggs and added fresh cracked pepper with Country Style Chicken Sausages.
Here is my favorite Pumpkin Pancake Recipe
Pumpkin Pancakes
1 1/2 Cups of Milk
1 Cup of Pumpkin
1 Egg
2 Tablespoons Vegetable Oil
2 Tablespoons of Vinegar
2 Cups of Flour
3 Tablespoons of Brown Sugar
2 Teaspoons of Baking Powder
1 Teaspoon of Baking Soda
1 Teaspoon All Spice
1 Teaspoon Cinnamon
1 Teaspoon Ground Ginger
1/2 Teaspoon Salt
In large bowl mix all ingredients. Mix with mixer until batter is smooth. Using a 1/2 cup measuring cup pour batter onto skillet. Flip when golden brown and eat when both sides are golden brown. Warning: These are addictive.
Chicken sausage AWESOME! because I don’t eat pork and this is a great alternative to sausage.
