STEAKS WITH GRAVY AND ROASTED VEGETABLES
6-8 hand sized round steaks
1/2 onion, sliced
1 small can sliced mushrooms, drained
2 packs brown gravy mix
1 cup water
3 large carrots, sliced
2 lb. brussel sprouts (I used frozen ones)
olive oil
salt, pepper, garlic powder, onion powder, chives
Put steaks in bottom of crockpot, sprinkle with salt and pepper, top with sliced onions and mushrooms. Cover and cook on high for 2 hours. Sprinkle with both packs of gravy mix and stir around a little to absorb mix, add 1 cup of water if you want more gravy~ Cover and cook on high for 3-4 more hours on high. When you can cut the steaks with a fork they are ready to eat.
Meanwhile, cover a long baking sheet with heavy duty aluminum foil, spray with cooking spray. Put brussel sprouts and sliced carrots on sheet and drizzle with olive oil, sprinkle with salt, pepper, garlic powder, onion powder, and chives. Bake at 400 degrees for 20 minutes or until vegetables are soft and browned on the top.

That sounds easy enough to make. I love brown gravy and mushrooms. I would skip the vegetable and have mashed potato with it.
