TAMI’S ENCHILADAS
6 boneless, skinless chicken breasts, cooked and shredded
1/2 can LAS PALMAS green chile enchilada sauce (28 oz. can)
1 can black beans, drained
1/2 cup salsa
1 env. Fiesta Ranch Dip Mix
tortillas
salt, pepper, onion powder, garlic powder
shredded cheese, sour cream, onions, etc. for toppings
Mix all ingredients (except toppings) in a large pot or skillet and heat through~ Fill tortillas and add toppings~ Serves 6 or more~
I made these up last night using what I had on hand and we loved them~ After filling the warmed tortillas I topped them with cheese, a little salsa, and sour cream~ Very good~

they are delicious~ I love Mexican food too but not too HOT~ I can go as far as Medium and that’s it~
