I’m constantly on the look out for making a recipe with already cooked chicken, turkey and pork. I cook them in large batches and use them another day. A family pack of chicken for my family of four I can usually get 3 meals out of (depending on the size of the package of course). Recently I made Parmesan Chicken Casserole and it was a huge hit with the whole family. I served this with couscous though you could serve it with noodles or rice too.
This is quick and easy and my prep time was about 10 minutes, and the cook time was about 45 minutes, making it a great meal when you’re in a hurry.
Easy Chicken Parmesan Casserole
Ingredients
6 Cups of Cooked Chicken Cut/Cubed
1 Cup of Mayonnaise
1/4 Cup Parmesan Cheese From The Can
1 1/2 Teaspoon Seasoned Salt
1/2 Teaspoon Pepper
1 Teaspoon Garlic Powder
1 Bag Frozen Broccoli
1/4 Cup Chicken Broth
Directions
Preheat oven 350F
In a bowl mix Mayonnaise, Parmesan, Seasoned Salt, Pepper and Garlic Powder until blended well.
In a casserole dish add chicken and broccoli. Add the Mayonnaise mixture and mix well coating chicken and broccoli.
Bake at 350F for 30 to 45 minutes or until hot.
Serves 6 people.
